A simple method for distinguishing calf rennet from micro-bial rennet substitutes

Calf rennet can be readily distinguished from the rennets obtained from Mucor pusillus, Mucor miehei and Endoihia parasitica by its much lower capacity to induce tertiary proteolysis of casein, as measured by spectrophotometric estimation at 280 nm of the tyrosine-tryptophan peptide content of a 3% TCA filtrate of the treated casein solution.
