A study of objective criteria of organoleptic quality in Golden Delicious apples

Results obtained from tasting panels and from chemical analyses of Golden Delicious apples showed that the total sugar content of the fruit is the factor which has the greatest influence on eating quality. The consumer preferred fruits with high acidity, provided the sugar content was also high, but the tolerance limit for some consumers was a sugar: acid ratio lower than 25.
