A study on the organoleptic quality of Golden Delicious apples

Fruits of 70 mm. diameter, harvested at the same time from 5-10-year-old trees on M.IX rootstocks, were stored either at 2 degrees C. or in a refrigerated CA store containing 3% O2 and 5% CO2, and were tested monthly from November until April. Laboratory tests included determinations of flesh firmness, skin colour, fruit density and contents of juice, malic acid and sugar. The best apples had sweet, yellow flesh, yellow skin colour and favourable texture and aroma.
