For a bulk sample of buffaloes' milk at an unspecified time of the year the following values are given: pH, 6.6; sp. gr., at 15 degrees C, 1.0340; acidity as lactic acid, 0.2l g/100 ml; TS, 18.3%; fat, 7.9%; protein (Nx6.37), 4.73%; lactose, 4.97%; ash, 0.75%; ascorbic acid, 35.2 mg/l; beta -carotene, l micro g/L The values for the fat were: acidity as oleic acid, 0.2l%; refractive index, 1.4575; refractometer number, 47.3; Reichert-Meissl value, 35.0; Polenske value, 2.5.
