The Kofranyi method was compared with the Kjeldahl method (6 samples, 6 analyses of each) and with an amido black colorimetric technique (4 samples, 10 analyses of each). Results showed negligible differences between the 3 procedures; it is concluded that the amido black colorimetric technique is suitable for routine milk protein determination in view of its simplicity, speed and economy.
