Effect of pectin and algin upon protein utilization, digestibility of nutrients and energy in young rats

The effects of pectin, algin, their monomers galac-turonate and mannuronate, and cellulose on the absorption and utilization of protein, fat and Ca were studied with groups of 6 weanling rats in experiments lasting for 10 days. Two samples of pectin were used, pectin-S (slow-setting, 55% esterified) and pectin M (medium-rapid setting, 65% esterified). The basal diet contained 10% casein and the test substances replaced 5 or 10% of starch.
