Effect of temperature on the growth, water content and condition of mushroom sporophores

Observations on mushrooms from experiments in controlled-environment cabinets showed that higher temperatures in the range 57 degrees -67 degrees F. produced mushrooms which grew faster and larger, contained a lower percentage of water and were less discoloured at, and 2 days after, harvest.
