Increase of solubility of roller-dried skim-milk for ice cream manufacture

Insoluble dried skim-milk residue, separated from ice cream mix by centrifugation, was mixed with an equal vol. of 0.2% solutions of (i) pancreatin or (ii) Orizin (Aspergillus oryzae) preparations and incubated for 3 h at 40 degrees C.
