N was applied to potatoes at 60, 120 and 150 kg/ha in combination with either 120 or 240 kg K2O/ha. Increases in the rate of applied N gave proportional increases in the protein content of tubers. Starch content increased with 60 kg N/ha, but not with 120 kg/ha, and decreased with 180 kg/ha.
