Investigations on the influence of variety and locality on the suitability of potato tubers for the production of crisps

A highly significant correlation between tuber reducing-sugar level and crisp colour was confirmed. Mean monosaccharide content ranged from 0.13% for Aquila to 0.69% for Apollo. Actual levels found depended on locality. Accumulation of reducing sugars in storage at 2 degrees C depended on variety but not on initial content or on locality.
