On the carbohydrate composition and nutritive value of some cereals

Samples were from the 1968 harvest at the Viik Experimental Farm For wholemeal hulls and, by calculation, dehulled grain of oats var Sisu, those fractions and flour of barley var Otra, wholemeal of rye var Ens, wheat var Svenno and winter wheat var Elo, wheat bran, timothy late leaf and flowering stages and rye straw are tabulated, per cent of dry matter, the content of starch, hemi-cellulose, cellulose, crude lignin, crude protein and ash and the percentage distribution in hemicellulose of xylose, arabinose, glucose, uronic acids, galactose and mannose Oats and barley differed from wheat and rye appreciably only in the hull Hulls were like straw, rich in lignin, cellulose and xylose but with more xylose than straw Bran had relatively little lignin or cellulose, being chiefly of hemicellulose with xylose and arabinose as its main components Endosperm was mainly starch with some hemicellulose and protein but little cellulose or lignin Wheat was richest in starch, rye in hemicellulose and oat in crude protein and lignin Feed values of the different fractions of grain are discussed-M S.
