The total pectin, the water-insoluble pectin and the water-soluble pectin contents of under-ripe cherries were found to be considerably higher than those of ripe or over-ripe cherries, there being no significant differences in the pectin contents of ripe and over-ripe fruits. Pectinesterase activity increased with advancing maturity. No polygalacturonase activity was detected in either fresh or frozen cherries at any stage of maturity.
