Percentage of meat in main cuts from white and black meat-type pigs and their crosses

Dutch Landrace (D.L.), Large White (L.W.), Mangalitsa, Large Black (L.B.) and Black Slavonian (B.S.) pigs and different 2-or 3-breed crosses of these breeds were fattened from approx. 20 kg to approx. 100 kg body weight. The highest dressing percentage was obtained in crosses involving L.B.s and B.S.(81.6); percentage of meat in ham was highest in D.L. x L.W. (73.1), percentage of meat in shoulder in D.L. x L.B. (69.2), and loin percentage of carcass in D.L.s (5.6).
