No relationship was found between the natural salt balance of cows' and buffaloes' milk and their stability to heat, rennet or alcohol, but alteration of this balance by the addition of citrate and phosphate or Ca++ and Mg++ greatly influenced stability to heat and rennet; alcohol stability was much less affected.
