Studies on the varietal suitability of apricots for canning. I. Varietal differences in the citric and malic acid ratios in apricot fruit juice

In all varieties studied in 3 successive years the concentration of malic acid gradually decreased during maturation, whereas that of citric acid was almost unchanged in some varieties but greatly increased in others.
