A wide variety of fermented food products and beverages are produced across the world. In this chapter, the authors present brief descriptions of some of the most important fermented food and drink products, including the type of microbes used in their production and the type of fermentation involved. Categorizing thes by means of the raw materials used (cereals, legumes, cereal and legume mixtures and other plant raw materials) a number of product are described in more detail.
