Evaporated milk is sterile and has a very soft curd. One liter contains about 2,640 I.U. of vitamin A and 17 I.U. of vitamin D if made in winter. In summer the amts. are 4,400 and 42 I.U. respectively. Each liter contains, when freshly made, about 0.502 mg. of vitamin B1 and 8.5 mg. of vitamin C. Over an 8-month period of storage at room temp., 50-60% of the vitamins B1 and C are lost.
