Enzymes of ragi and ragi malt: III. Pyro and glycero-phosphatases

The nature and properties of glycero and pyrophosphatases of ragi (E. coracana) and its malt were investigated. The resting grain possesses only slight phosphatase activity. Germination of the grain leads to a pronounced increase in the activity of both pyro- and glycerophosphatases. Mg and Zn ions do not affect the activity of the two enzymes but fluoride ion strongly inhibits their activity.
