Investigation of enterococci in humans and in animals. V. A. The occurrence of enterococci in food materials, and particularly in milk products

In the examination of samples of food items (fresh milk, bottled milk, cream cheese, ice cream) 211 strains of enterococci from all 6 types were found. Their percentage distribution was: Streptococcus bovis (35,5%), S. faecium (27,4%), S. faecalis (27,0%)S. liquefaciens (2,8%), S. zymogenes (1,4%), and S. durans (3,3%). The enterococci in milk and milk products did not correspond entirely to the biochemical types and subtypes in cattle. On the other hand, there was a much closer correspondence between these biochemical types and subtypes with the frequency distributions of these types in human feces. The enterococcal colonization of the gut is largely influenced by their entry through the food substances. Within 6 mo. of the oral presentation of food inoculated with enterococci, these will proliferate in the intestine for a time, and establish themselves even if this is only for a limited period, in pigs. A similar attempt on calves, using enterococci and in a parallel investigation, streptococci of the serological group-N, was negative.
