Abstract
The Eucheuma species and their distribution in the warmer oceans, above all in the South East Asian coastal and insular areas and on the East African coast, are described. The characteristic species. muricatum is discussed. Methods for the collection and preparation of raw materials are also described. Eucheuman is a sulphated galactan, usually of a high viscosity. Eucheuman products have different gelating, stiffening and thickening properties depending on the country of origin and the method used for production. Their field of application is somewhat intermediate between that of agar and carrageenan.
