Dehydrated sweet potatoes are very good source of carotene, a fair source of thiamine and ascorbic acid and a poor source of riboflavin. Flavor and thiamine are retained well for 1 yr. regardless of packaging, but carotene and ascorbic acid decrease about 60% during storage in air; inert gas is advocated. They are inedible after 3 mos. storage at 130[degree] F, satisfactory after 12 months, storage at 98[degree] F.
