Abstract
Topics discussed are the nature of pectic substances extracted from pectocellulosic fruit membranes (mixture of polygalacturonic acids esterified by methyl alcohol and pentosans); possibility of separating the 2 constituents by fractional precipitation in alcohol; acidimetric method for determining the proportion of real and esterified pectic acids in pure pectins; superiority of the classical method with sodium pectate; and results obtained with different fruit juices.
