Studies on phytic acid from the standpoint of nutrition II. The comparison of phosphorus and calcium metabolisms with a few foods containing much phytic acid

The excretion of phytic acid P was similar with the diets containing cereal (rice and bran) foods and those containing legumes (Dolichos lablab and soybean curd or tofu); thus there was no difference between the presence (in the former) and absence (in the latter) of phytase. The absorption of P, Ca, and ordinary organic nutrients was compared among the normal, the cereal, and the legume diets. In general the normal diet was best, and the legume diet gave a little better result than the cereal diet.
