Studies on yeasts in dairy products. III. The pink yeasts common in milk and cream

Approximately 90 cultures of pink yeasts were isolated, largely from milk, cream, soft cheese and butter obtained in the vicinity of Ames, Iowa, and studied in more or less detail. It was found that most of the cultures belonged to a common type, which is considered to be Torula glutinis. Two other types were encountered in small numbers and named Torula rubicunda and Torula paraglutinis. A description of T. glutinis is given, together with a list of the variations from this type shown by T. rubicunda and T. paraglutinis.
