The effect of fortification of sesame proteins with lysine so as to raise its levels to that present in FAO [Food and Agricultural Organization] reference protein pattern (4.2%) and in milk (8.2%) on the protein efficiency ration (PER) and net protein utilization (NPU) has been studied at 10% level of protein intake. The PER (in 4 week-period) and NPU of sesame proteins were 1.70 and 55.7 respectively. The PER increased to 2.14 and 2.91 and the NPU values to 63.2 and 80.9 when the lysine levels were raised to 4.2% and 8.2% respectively.
