Phosphatides were found in apple, peach, pear and plum in amts. varying from 0.009% for apple flesh to 0.03% for peach flesh and from 0.0011% for apple skin to 0.066% for plum skin; the kernel of peach contained 0.21%, of the plum 0.41%. The ether extract varied from 0.11% in pear flesh to 0.37% in plum flesh and from 0.54% for pear skin to 1.57% for peach skin.
