Culture media for selective counting of thermophyle lactic acid bacteria and streptococci

The development of 2 culture media for <i>Lactobacillus delbrueckii</i> subsp. <i>lactis</i> and <i>Streptococcus thermophilus</i>, used as start cultures for Swiss cheeses, is described. The new culture media are called MRS-5.4 and SR-9.2, respectively. Comparisons with the traditional media (MRS and M17, respectively) showed good culture growth on the new media. No streptococci grew on MRS-5.4 due to its low pH (5.4).
