Mutation in exon 4 of apoVLDL-II gene is a candidate for meat tenderness in chicken

The aim of this experiment was to investigate the effect of mutation in apoVLDL-II (apo very low density lipoprotein II) gene on meat quality traits of genetically fat (Anka) and lean (Rugao) chicken breeds. Meat quality traits such as Water Holding Capacity (WHC), pH, Color Density (CD) and tenderness (Shear value (kg cm<sup>-2</sup>)) were analyzed from breast muscle.
