Effect of iron on the intensity of fermentation and catalase formation by propionic acid bacteria

Fe deficiency limited growth and synthesis of vitamin B12 in cells of P. shermanii. Under these conditions, glucose absorption and formation of volatile acids increased considerably. Substrate-linked phosphorylation may be the only reaction which supplies energy to cells with Fe deficiency. The cell capacity for catalase synthesis decreased essentially; H2O2 accumulated in the culture fluid. The biosynthesis of catalase in P. shermanii did not correlated with the synthesis of vitamin B12.
