Presented herewith are the specific features in shaping quantitative and qualitative composition of protein in grain of spring barley varieties with different origin and nature of usage under the influence of sharply contrasting natural-climatic conditions in the years of research. A definite correlation has been found in contents of protein and several aminoacids depending on conditions of crop vegetation.
